Several weeks into the pandemic I made a goal to try to incorporate vegetables into every one of my meals. Although I haven’t been 100% successful (your girl loves her morning bowl of cereal), I have experimented with how one can incorporate veggies in unique ways. Something I discovered was that cauliflower is a versatile veggie.
Here are some of my favorite uses of cauliflower:
1. Cauliflower Rice
Check out Trader Joe’s cauliflower rice in the freezer section. Pair this with some vegan pesto and BAM you have an amazing side dish or base for dinner.
2. Cauliflower Smoothie
Sounds gross, right? I thought the same when a nutritionist told me how she puts cauliflower in her smoothies. She claimed it helped make them “creamier” and that you “couldn’t taste it”. Well… she was right!
1 frozen banana, ½-¾ cups frozen cauliflower (I used cauliflower rice because it’s easier to blend), almond milk, and a few tablespoons of almond butter… YUM!
3. Cauliflower Pizza Crust
Trader Joe’s has a good one but I’ve seen other grocery stores sell these as well. If you’re looking to add some veggies and cut out gluten, this is a great switch!
4. Cauliflower Steak
Check out this recipe for a delicious garlic parmesan cauliflower steak. Minimal effort, exquisite outcome.
5. Cauliflower Gnocchi
I’m sure you can tell where I do most of my grocery shopping by now (lol) but Trader Joe’s sells these bad boys and they are delicious! Pair them with a protein and sauce and dinner is served! I recommend baking them in the oven over sautéing in a pan. I bake them for 20 minutes at 425 °F with a little bit of olive oil on top. This helps them to get crunchy on the outside and gooey on the inside.
